Wordsnack " Recipes"

Healthy Recipes:

Breakfast Burrito
•1 1/2 cup(s) diced potatoes
•1 cup(s) diced onion
•pinch(s) salt
•2 tablespoon(s) olive oil
•2 eggs
•One hit of hot pepper sauce
•pinch(s) ground black pepper
•3 large flour tortillas
•3 tablespoon(s) sour cream
•4 slice(s) cooked bacon
•1/2 cup(s) diced tomato
•1 cup(s) grated Monterey Jack cheese
•1/4 cup(s) cilantro leaves
•1/4 cup(s) salsa

Directions:
1.Preheat the oven to 425 degrees. Toss the diced potatoes and onions with the salt and olive oil until coated. Spread this mixture in an even layer on the baking sheet. Roast for 30 to 35 minutes, or until golden brown. Turn off the oven and use the oven mitts to remove the baking sheet.

2.Heat the nonstick skillet over a medium burner. Crack the eggs into the skillet and add the hot sauce and ground pepper. Scramble the eggs with a rubber spatula while they cook, which should take about 4 minutes.

3.Spread sour cream on each tortilla. Divide the filling ingredients among the tortillas, and roll them up. I like to add extra hot sauce to mine before I roll it up!

Chicken Salad (Lunch)
•1 cup(s) mayonnaise
•2 teaspoon Madras curry powder
•1 tablespoon(s) honey, salt and pepper
•4 cup(s) shredded roasted chicken, skin removed
•2 carrots, coarsely shredded
•1/4 cup(s) chopped nuts or sunflower seeds

Directions:
1.In a medium bowl, combine the mayonnaise with the curry powder and honey and season with salt and pepper. Add the chicken, carrots and nuts and stir to combine.

2.Serve With: Crusty bread, in pita or with green salad.

Chicken Parmesan (Dinner)
•2 eggs, beaten
•1 cup grated Parmesan cheese
•7 ounces seasoned bread crumbs
•6 skinless, boneless chicken breast halves
•1 tablespoon vegetable oil
•12 ounces pasta sauce
•6 slices Monterey Jack cheese

DIRECTIONS:
1.Preheat oven to 375 degrees F (190 degrees C).

2.Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.

3.In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear.

4.Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken, then place a slice of Monterey Jack cheese over each breast, and bake in the preheated oven for 20 minutes or until cheese is completely melted.

Carmel Snack Bars
•1 cup(s) Flour
•1/2 teaspoon(s) Baking Soda
•1/4 teaspoon(s) Salt
•1 cup(s) Oatmeal
•3/4 cup(s) Butter
•32 piece(s) Carmel

Directions:
Carmel Bars-Melt 32 carmels in 5Tabls. milk on top of a double boiler.Mix together and put 1/2 of mixture in the bottom of a 9x13 greased pan. Bake at 350 for 10 minutes. Remove pan from oven and sprinkle a 6 oz. pkg. of choc. chips on crust. Pour carmels over the top and crumble the other 1/2 on top and bake for 15 min. more.( do not over bake). This recipe can be doubled and put in a jelly roll pan.
